Wild Sour Ale

These beers feature less complexity than the Spontaneum ones, being produced with a pitch of a mixed culture of both conventional and wild yeasts.

So they are beers that combine freshness and drinkability with wild characters and a gentle acidity.

Istà

Our interpretation of ancient farmhouse ales, beers brewed by farmers to quench their thirst during the summer hard work in the fields.

It’s a blend of our Spontaneum and a fresh saison ale. Fresh, funky, gently dryhopped with noble hops.

Istà Rose

It’s the “sister” of our Istà, but it features the adjunct of fresh grape must of Tai Rosso and a gentle dryhopping with American hops.

It’s a blend of our Spontaneum and a fresh American IPA. Hoppy, fruity, funky.

Incrocio Rosso

Brewed with malted barley and raw wheat, this beer matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation we add grape must of our red grapes.

Incrocio Bianco

Brewed with malted barley and raw wheat, this beer matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation we add grape must of our white grapes.

On the Peach

Brewed with malted barley and raw wheat, this beer matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation we add a selection of ancient varieties of Venetian peaches.

Brewed with malted barley and raw wheat, this beer matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation we add fresh elderflowers and grape must of our white grapes.
